Easter Egg Leftovers

I thought that this might be a good time to come up with some good ideas of what to do with your easter egg leftovers. They’re only good in your fridge for about a week!

This is my favorite egg salad recipe:
8 hard-boiled eggs
1/4 c mayonnaise
1 garlic clove minced
2 T fresh Dill
1/2 red onion
salt and pepper to taste

Chop, mix, and serve!

You can also sprinkle some chopped egg over some sauteed asparagus with butter, parsley salt and pepper.

Breakfast Pizza
Start with your favorite pizza crust recipe
Here’s mine
1 T yeast
1 1/2 cups warm water
2 T Honey
3 T olive oil
1 t salt
3-4 cups all-purpose flour
1 t corn meal

Put your pizza stone into the oven and Heat oven to 400 degrees
Proof the yeast, add the sugar and oil. Mix in flour until the dough is no longer sticky. Knead until smooth. Sprinkle corn meal onto the pizza stone. Press out into shape on a pizza stone.

Add your chopped hard boiled eggs, any cheese, veggies, and breakfast meat to your pizza crust and bake in the oven for 12 -15 minutes until crust browns.
